Indian Peppers recipe

This simple Indian dish of cooked peppers is the perfect accompaniment to any Indian meal - serve it with roti and bhajis with a little yoghurt, or on the side of a curry. The cooking process yields sweet, juicy peppers with a real kick.

Ingredients:

  • 2 red peppers
  • 2 yellow peppers
  • 1 red chilli
  • 1 tbsp. vegetable oil
  • 1 tsp. black mustard seeds
  • 1 tsp. turmeric
  • 1 tsp. cumin
  • 2 tbsp. chickpea flour
  • Salt and pepper

Method of Preparation:

  1. Remove the top and bottom of the peppers and take out the seeds. Cut into strips.

  2. Heat the oil in a frying pan and add the whole chilli, mustard seeds, turmeric and cumin. Fry for one minute.

  3. Add the peppers then sprinkle with chickpea flour. Add 1 tbsp. water, then simmer for five minutes, adding more water if needed. Stir well to dissolve the flour.

  4. Season with salt and pepper before serving.

Serve hot or cold depending on your tastes. These peppers would be delicious with something as simple as cold hams and cheese, although they're delicious with classic Indian food too. This recipe serves four.
