Fish Bhuna recipe

Fish curry is a really unusual meal, although it is actually rather delicious served with plain cooked rice and a plain naan bread. You should use a meaty fish that stands up well to cooking, such as cod, sea bass or haddock. White fish works best although you can use whatever you have to hand.

Ingredients:

  • 4 fillets of fish, cut into four, deboned, skin removed
  • 2 medium onions
  • 4 fresh green chillies
  • 4 garlic cloves
  • 200g tinned chopped tomatoes
  • 3 tbsp. vegetable oil
  • 1 1/2 tsp. each of paprika, ground cumin and ground coriander
  • 1 tsp. each of ground turmeric, salt and chilli powder
  • 125ml water

Method of Preparation:

  1. Finely slice the onions and crush the garlic cloves.

  2. Cook the onions and garlic in the oil for 3-4 minutes. Meanwhile, slice the chillies in half lengthways and remove the seeds.

  3. Stir the chillies into the onions and garlic along with the salt and the water. Turn down the heat and simmer until the onions are soft.

  4. Stir in the turmeric, coriander, chilli powder, cumin and paprika. Add the tinned tomatoes and simmer for 15 minutes.

  5. Add the fish, cover the pan and simmer for another 20 minutes.

If you don't like it too hot, remove the chilli halves before serving the curry. This recipe serves four people and would be fantastic made with chicken or pork instead of the fish - just be sure to adjust your cooking times to accommodate the type of meat you cook.
